Emile Henry's Modern Classics collection pairs the brand's HR ceramic performance with a vibrant, oven-to-table finish, and this 1.8-quart loaf pan is the standard size most bread and quick-bread recipes are written for, so you can bake straight from the cookbook without adjusting times. Burgundy clay diffuses heat gently and evenly instead of conducting it in hot spots the way metal pans do, which means loaves rise tall and bake through to the center with a soft, even crust rather than dark, over-baked sides. Use it for classic sourdough and wheat loaves, banana bread and sweet quick breads, pate, or a proper meat loaf. Emile Henry's HR ceramic resists both thermal and mechanical shock, so the pan travels directly from freezer or refrigerator into a hot oven up to 500F/250C, then goes to the table as a serving piece.
