This precision chef's knife is a symbiosis of elegant design, the latest technology and centuries-old knife-making art.

How it's made: The revolutionary FC61 steel core features fine carbide distribution and is protected by a durable 48 layers of damast steel. Fine carbide distribution creates a razor-sharp and durable blade with a 61 Rockwell hardness. The double ice-hardened FRIODUR® blade offers remarkable durability and cutting-edge retention. The blade is hand-honed using the historic Honbazuke method to an exceptionally sharp 9.5 to 12 degrees.

Additional features: The black pakkawood handle is wonderfully balanced and features a steel end cap with a decorative pin and ring.

Miyabi Kaizen II - Great at-home Knife
Really like the balance of the knife, and the shape and feel of the handle in my hand. Obviously the knife cuts great, and it's the perfect size chef's knife for someone like me, who feels like an 8-inch or larger chef's knife is a little too big for routine, at-home kitchen prep.

Perfect Chef Knife
I love how balanced this blade is. Its construction is just perfect! And it’s very very sharp so be extra careful with it.

Perfectly balanced
Beautifully balanced, incredibly sharp. I tested many knives from many other brands: Shun, Wusthof, etc.. and this was easily the most comfortable and balanced. FC61 has held up well in my other Miyabi knives and I have no doubt this one will too.

Great Chef Knife
Very good knife very sharp edge and nice hard steel. Cut through everything i put down. And the build quality and ergonomics are fantastic.

Sharp!
For an everyday knife I have been using a 5.5 inch santoku knife. This knife is definitely different! Being a more classic chef knife, I have to get used to a different motion. I also hold it different than my santoku. For my petite hands, it does feel a tiny big large/heavy, but I think it's something I'll get used to. It is SO sharp. It is well made and it looks great. I think this knife will get used a lot!
