Gyokuro (aka “Jade Dew”) is one of the most exclusive Japanese green teas. Shade-grown in Uji to concentrate chlorophyll and L-theanine, it delivers a pronounced umami character with medium caffeine.
- Ingredients: shade-grown Japanese green tea. Brewing: add 1 tbsp leaves, cover with 2 oz cold water and steep 5 minutes for an umami-first infusion; then add 10 oz hot water (130°F) and steep 30 seconds. Re-steep 2–5 times; later infusions become more astringent and less umami.
