This knife is so versatile in shape, weight and edge that it can be used for mincing and chopping herbs, vegetables and fruit as well as for preparing fish and meat. The sharp blade of a Santoku allows anything from regular to wafer-thin cuts—it is therefore now indispensable in kitchens all around the world.
Additional features: The essential piece is forged and triple-riveted to its handle for durability, and tempered to 58 degrees Rockwell.

The knife is separating at the top like a puzzle piece. This was a replacement for one that broke in half from normal use.

The handle has a nice

Fantastic Feel.
Love the blue color and the size of the knife is just perfect. The blade is fantastic. The feel of this knife is the right weight and proportion for chef like cuts. A bonus is that the company will stand behind it if anything should happen. Highly recommend it.

My WÜSTHOF knives were a wedding gift over 20 years ago. They are beautiful kitchen tools, and are beautifully made. Unfortunately I had an issue with the handle on my favorite knife.
